Cinnamon Oatmeal Pancakes




Today's recipe is for pancakes, but it's somehow different, to know more about pancakes check out my previous post >> Heart Shaped Pancakes. Back to our recipe today it's pancakes with different yummy flavor (cinnamon & nutmeg), hope you like it :)

Recipe Tips:
1- I use oats in this pancake batter so they will take more time to cook than regular pancakes.
2- Never over mix the batter, just till the ingredients are mixed together.

Serves: 4 people
Prep time: 5 minutes
Cooking time: 15 minutes




Ingredients:

1 whole egg
1 tbsp brown sugar - can substitute with maple syrup
1 tsp vanilla
1 1/2 tbsp oil
3/4 cup rolled oats
1/6 cup raisins (more or less, up to you)
1 cup plain yogurt
1/3 cup Flour
1/4 tsp baking soda
1/4 tsp baking powder
1 pinch ground nutmeg
1 pinchs cinnamon
1/4 tsp Salt
1/2 tbsp oil or butter
1/2 cup Strawberry jam (optional)
maple syrup

Directions:

1- Whisk together eggs, brown sugar, vanilla and oil, then mix in the oatmeal, raisins, and yogurt, mix and set aside.
2- In a separate bowl mix together flour, baking soda, baking powder, nutmeg, cinnamon and salt.
3- Mix wet ingredients into the dry. Stir until the dry ingredients are just incorporated "do not over mix". Turn heat to medium-high and lightly oil your griddle or frying pan, and ladle the batter onto the griddle, and let cook for few minute before flipping, then flip and let cook until cooked through.


4- Fill layers with strawberry jam and serve warm topped with maple syrup, and... Bon Apetit :)
