Chicken Saudi Kabsa طريقة كبسة الدجاج بالصور

الكبسة من الأكلات السعودية الشهيرة واللذيذة، قمت من قبل بتقديم كبسة ريش الضأن  واليوم أقدم لكم كبسة الدجاج اللذيذة وأتمنى أن تعجبكم.
نصيحة الوصفة:
1- ليمتص الدجاج طعم التوابل بشكل أفضل يقطع إلى 8 قطع ويفضل استخدام نفس مقادير التوابل أو أكثر وأن يبقى الدجاج مدة لا تقل عن ساعة إلى ساعة ونصف على النار.
2- توابل الكبسة التي استخدمتها في الوصفة ملعقة شاي من (بودرة الكاري - كركم - زنجبيل - فلفل أسود) ونصف ملعقة شاي من كل من (القرنفل أو المسمار المطحون - الهيل او الحبهان المطحون - كزبرة - كمون)

الوصفة تكفــي: 2 إلى 3 أشخاص
وقت التحضير: 10 دقائق
وقت الطهــــي: ساعة ونصف تقريباً
Kabsa is the most popular and delicious main dish in Saudi Arabia, I made it before with lamb ribs >> Lamb Ribs Kabsa and today I'm going to show you how to make it with chicken hope you like it :)

Recipe Tip:
1- For the chicken to gain all the flavors it's best cut in 8 pieces  use same or more measurements of spice, and cook not less than 1 to 1 and half hour.
2- The kabsa spice mix I used is one tsp of each (Curry powder - turmeric - ginger - black pepper), 1/2 tsp of each (ground cloves - ground cardamom - coriander - cumin).

Serves: 2 to 3 people
Prep. Time: 10 minutes
Cooking Time: 90 minutes approx.

المقادير:
1 دجاجة كاملة كيلو أو كيلو ونصف مقطعة 8 قطع
1 1/2 كوب أرز
2 ثمرة بصل مقطعة 
1 ثمرة جزر كبيرة مبشورة
5 فصوص ثوم كبار مقطعين شرائح
3 حبات طماطم مفرومين
1 ملعقة طعام ملح (حسب الذوق)
وفلفل حسب الذوق
2 ملعقة طعام توابل كبسة
رشة فلفل أحمر حار
3 ورق غار
1 عود قرفة
3 حبات لومي (ليمون مجفف)
5 ملعقة طعام زيت زيتون
1 أو 2 ثمرة فلفل أخضر حار
5 كوب ماء
1 كوب زبيب
1 كوب مكسرات أو قلوبات مشكلة محمصة (لوز، صنوبر، بندق) (اختياري)

الطريقة:
1- في إناء على حرارة متوسطة نضع زيت الزيتون ومعه البصل ونقلب إلى أن يصبح البصل شفاف ثم نضيف الثوم والجزر ونقلب ليصفر لونه.





2- نضيف عصير الطماطم والدجاج والملح وكل التوابل والقرفة والليمون الجاف وورق الغار ونقلب ونضيف الفلفل الحار ونقلب جيداً.




3- نضيف 2 كوب ماء ونقلب وعندما يغلي نهدئ النار إلى متوسطة لهادئة ونترك الدجاج ينضج مدة ساعة إلى ساعة ونصف ليتشرب الطعم جيداً.



4- ننقل الدجاج إلى صينية للفرن لنحمر الوجه وفي نفس إناء الدجاج نضع 3 أكواب ماء ونضبط الملح وعندما يغلي الماء نضع الأرز والزبيب ونهدئ النار لهادئة ونتركه ينضج حوالي 20 إلى 30 دقيقة.





5- نضع الدجاج في شواية الفرن المتوسطة لهادئة حوالي عشر دقائق أو إلى أن تأخذ لون جميل.



6- عندما يجهز الأرز نضيف له المكسرات أو القلوبات ونقلب ونضعه في طبق التقديم وفوقه الدجاج والفلفل الحار ويمكن التزيين بالمكسرات المحمصة، وبالهناء والشفاء :)




Ingredients:
2 or 3 pound whole chicken cut into 8
1 1/2 cup rice
2 onion, chopped
1 large carrot, shredded
5 cloves garlic, sliced
3 tomato, juiced
1 tbsp salt (to taste)
2 tbsp Kabsa spice mix
pinch of chili powder
3 dried bay leaves
1 cinnamon stick
3 dried lemons
5 tbsp olive oil
1 or 2 hot green pepper
5 cup water
1 cup raisins
1 cup toasted nuts (almond, pine nut, hazelnut) (optional)

Directions:
1- Place a pan on medium heat with onion and olive oil and stir till translucent then add garlic and carrots and stir till yellow.
2- Add the tomato juice, chicken, salt, Kabsa spice, dried limes, cinnamon stick, bay leaves, and hot pepper and stir well.
3- Add 2 cups of water and stir, once boiled lower the heat to medium low and let cook for about 60 to 90 minutes.
4- Transfer the chicken to a baking tray to broil and in the same pan add 3 cups of water and check the salt an higher the heat to high once boiled add the rice and raisins and stir till boil again then lower the heat to low and let cook for 20 to 30 minutes.
5- Broil the chicken in medium low broiler for about 10 minutes or till golden.
6- Once the rice is done mix in nuts and transfer to a serving plate topped with broiled chicken, hot pepper and garnish with toasted nuts, and... Bon Appétit :)

I have been searching for the perfect recipe and I thank you so much.   2. As salam, i came across ur blog by chance & finaly found this tempting kabsah recipe. & d steps by steps pic are soo helpful. The chicken is rubbed with additonal kabsah spices yes? Not with d 2tbsp mentioned in d recipe. Tq. From Farah

      the 2tbsp are taken from the mix I mentioned in the tips, chicken rubbed with them or just sprinkled with them in the pan

  3. Salam. I'm making this dish for the first time. Never tried it before but heard of it from my family members. I read the recipe like five times and I can't find the instructions on when to add the dried lemon, cinnamon and bay leaves? Can you help please? Thanks
