Chicken Stromboli



Back again with a new recipe that I hope you like. Stromboli is an Italian dish that is a folded Italian bread dough contains pepperoni, some people changed in the recipe by using pizza dough or different types of dough instead of Italian bread dough, also changed the ingredients that fill the dough, today I used my own dough and used chicken instead of pepperoni.

First time I heard about this dish was while watching a TV show talking about Mario Batali's success story and that he started working in a restaurant cooking Stromboli, then I wanted to know more about this dish and how it's been cooked, and I made it right away, it was my first time and it was a great success and my husband loved it. It's really delicious I hope you try it and love it too.
Tips:
1- You can use the available ingredients as you wish to fill the dough.

Prep. time: 60 minutes (depending on how long you proof the dough)
Baking time: 20 minutes.
Serves: 4 people


Ingredients:
For the dough:
4 cups flour
1 cup warm water
1/2 cup warm milk
1/4 cup olive oil
1 tbsp dried thyme
pinch of black pepper
pinch of cumin
1/2 tsp salt
1 tbsp dry yeast
1/4 tsp sugar

For the Filling:
1/2 chicken breast
1 big onion, chopped
2 tbsp olive oil
1 bell pepper, chopped
1/2 cup olive pickle slices
1 cup mozzarella cheese
Dutch cheese with red pepper (optional)
4 tbsp tomato paste
2 tbsp feta cheese

For the Side Sauce (Marinara Sauce)
1 tbsp olive oil
3 cloves garlic, finely chopped
1/2 tsp chili powder
1 tbsp chopped parsley
1 cup tomato juice
salt & pepper to taste

Directions:
1- In a mixing bowl mix the flour, thyme, salt, pepper, and cumin together and make a hole in the middle, add the water and milk gradually depends on your flour, read the tips here > Tips for a perfect dough add the yeast and sugar and begin to mix with your hands till the dough become one peace, then add the olive oil and knead for about 10 minutes, cover the dough with a plastic wrap and proof in a warm place for an hour.

2- Meanwhile prepare the chicken, place the onion and olive oil in a pan on medium high heat and sauté till the onion become yellow then put aside in the pan and add the chicken on high heat.


3- Sauté the chicken till golden brown and flip then mix with the onion and add salt and pepper and stir till cooked then put in aside to fill Stromboli later.


4- Once the dough is ready heat the oven 300C, cut the dough into two pieces and prepare each one, roll with the rolling pin as a rectangle on a floured surface like this.


5- Mix tomato paste with feta cheese and spread half of the mix on the rectangle and add half the chicken and bell pepper.


6- Add mozzarella cheese and olive pickles.

7- Start to fold like this.

8- Close the edges this way.

9- After finishing both dough pieces place them on a baking tray greased with olive oil and put it in the oven for 15 to 20 minutes.


10- Meanwhile prepare marinara sauce, place garlic and olive oil in a sauce pan on medium heat and saute for 2 minutes, then add the parsley, tomato juice, chili powder, salt and pepper and stir till it boils then cook it on low heat for 5 minutes.




11- Take Stromboli out of the oven and top it with dutch cheese slices then back into the oven till it melts.
12- Cut the Stromboli and serve with marinara sauce, and... Bon Apetit :)
