حلاوة الجبنة، بالرغم من أن هذه الوصفة تحديداً من الوصفات التي تحتاج لخطوات مصورة وفيديو لتوضيح طريقة إعدادها، لكن للأسف الشديد لسبب ما تلف كارت الذاكرة الخاص بي والذي صورت عليه الخطوات التحضيرية، لن أشتري كينجستون بعد الآن فهي ليست أول مرة تحدث معي :( 

ترددت كثيراً في وضع هذه الوصفة على المدونة لكن مع اقتراب شهر رمضان ولأنها من الوصفات التي طلبت مني كثيراً أحببت أن أضيفها! وأعدكم عندما أقوم بإعدادها مرة أخرى سوف أضيف الصور أو الفيديو أيهما كان متاح! 
نصيحة الوصفة:
1- ماء الزهر مركز جداً فإذا كنتم غير معتادين على طعمه يكفي وضع قطرة واحدة منه ستعطي لمحة خفيفة ولذيذة بنفس الوقت.
2- لابد وأن يتم تشكيل حلوى الجبن وهي ساخنة وإذا بردت يمكن تسخينها قليلاً مع إضافة ملعقة من الماء، لأنها إذا بردت لن يتم فردها بسهولة فتكون سميكة وستتكسر أثناء لفها.
3- هذه كمية كبيرة نوعاً ما، يمكن استخدام نصف أو حتى ربع المقادير فقط في حالة أنها أول مرة يتم فيها عمل هذا الحلو لتجربته.

Halawet El Jibn, a popular dessert in the Middle-east, made with "Akkawi cheese" which is a little like mozzarella.  Although this specific recipe needs to be shared with video, or at least step by step photos, but unfortunately for some reason my memory card is damaged and I lost all the shots :( Shame on you, Kingston!

I was very hesitated to put this recipe on my blog, but with Ramadan just around the corner, and I have been asked to share this recipe, so I had no choice but sharing it! And I promise you when I make other shots or video for it, I will sure upload them for you!

Recipe tips:
1- Orange blossom water is very concentrated, so you can add just a drop to add a slight lovely taste of it to the dessert!
2 - The cheese dough must be shaped while still hot, or else it would crack and be hard to roll thinly! When you feel it's cold, you could put it back on low heat and add a tbsp of water to reheat then work with it again!.
3 - I used large amount in this recipe, if it's your first time to make it you can divide the ingredients by half or even quarter to try it and see how it went for you!

Serves: 40 medium pieces or more, depending on the size

المقادير:
1 1/2 كوب ماء 
1 1/2 كوب سكر
1 ملعقة طعام ماء زهر مخفف أو قطرة (اختياري ممكن ڤانيللا)
400 جم جبن عكاوي بدون ملح (تم نقعه وتغيير ماء النقع 4 مرات) 
1 كوب سميد ناعم 
2 كوب شيرة أو شربات أو سيرب خفيف (الوصفة بالأسفل)

للحشو:
2 كوب قشدة حليب أو القشدة الكذابة (مهلبية بالقشدة)

فستق مجروش أو المكسرات المفضلة

الطريقة:
1- نجهز الشربات أو الشيرة أولاً ودعيه يبرد وجهزي سطح أملس لفرد خليط الجبن عليه للتقطيع والحشو.
2- على النار نضع الماء والسكر ونقلبهم ونضيف قطع الجبن والسميد وماء الزهر أو الڤانيليا، نقلب كل المكونات جيداً حتى تبدأ في التماسك ككتلة واحدة، وممكن عند بداية ذوبان الجبن استخدام مضرب البيض اليدوي لمنع أي تكتلات.
3- بعد أن يتماسك الخليط جيداً، نوزع ربع كوب من الشربات على سطح نظيف وأملس لفرد خليط الجبن ونعمل بخطوات سريعة حتى لا تبرد تماماً كما ذكر بالنصائح أعلى.
4- يتم فرد خليط الجبن بالنشابة أو الشوبك المبلل بالشربات، بحيث يكون سمك الجبن حوالي 2 إلى 3مم، وبعد الفرد يقطع طولياً بعرض الإصبع، ويتم حشو الطرف بمقدار من القشدة ويُلف الطرف ثم يقطع بالسكين وترص القطع بصينية للتقديم مرشوشة بالشربات الخفيف، وهكذا مع باقي الكمية، إلى أن ننتهي، ونضيف المزيد من الشربات للشوبك عند الحاجة.
5- يزين بالفستق المفروم ويرش ببعض الشربات حسب الرغبة، ويقدم أو يوضع بالثلاجة لحين التقديم وفي هذه الحالة يغطى بالبلاستيك cling film وبالهناء والشفاء :)

**طريقة تحضير الشربات: نغلي معاً كوبين من الماء مع كوب ونصف سكر دون تقليب، وعندما يذوب السكر تماماً ندعه يغلي خمس دقائق، ونضيف قطرة ليمون وقطرة من ماء الزهر أو الفانيليا ونتركه يغلي دقيقة ونطفئ النار ويترك ليبرد.


Ingredients:
1 1/2 cup water
1 1/2 cup sugar
1 tbsp diluted orange blossom water - or just one drop (or use Vanilla)
400g Akkawi (or mozzarella) cheese (soaked in water and changing the water 4 times)
1 cup soft semolina
2 cups light sugar syrup (recipe follows)
For the filling:
2 cup thick cream
Pistachio or your favorite nuts

Directions:
1- Prepare the sugar syrup first and let it cool. Prepare a smooth surface for shaping the cheese mixture.
2- In a pan over medium heat, put the water and sugar and stir. Add the cheese, semolina, blossom water or vanilla. Mix all together till well combined as one piece.
3- Now drizzle a quarter of a cup of the sugar syrup on a clean smooth surface, and work quickly so it doesn't cool down as mentioned above in the tips.
4- Using a rolling pin that's covered also with the sugar syrup, start to roll the cheese mixture on the wet surface, about the thickness 2 to 3 mm. Cut lengthwise so the width is about 5 cm, place a tablespoon of cream on the edge and start rolling that edge, then cut this piece and place on a serving plate, repeat and continue with the rest of the rolled cheese dough (they should look like the photo above).
5 - Garnish with chopped pistachios and drizzle some sugar syrup if desired, serve right away or refrigerate until serving and... Bon Appétit :)

**The sugar syrup:
Boil together 2 cups of water with a cup and half of sugar without stirring, and once the sugar is dissolved completely, let it boil for five minutes, add a lemon drop and a drop of orange blossom water or vanilla, and let it boil for a minute and turn off the heat and let cool.
