نحن الآن في نهاية موسم العنب، وهذا هو الوقت المثالي لتحضير مربى العنب! اعتادت جدتي أن تحضرها في هذا الوقت من العام، حيث كانت تقول أنه الوقت المثالي  في موسم العنب لأنه يكون كثير اللحم وقليل في نسبة الماء أو السائل مما يُنتج مربى لذيذة وليس مربى قشر العنب في حالة استخدام أنواع عنب أخرى! يكون العنب عبارة عن حبات كبيرة بالبذر ولونها يتدرج من الأخضر الفاتح للون الوردي.
حزنت جداً عندما توفيت منذ 7 أشهر وقررت أن أعد ألذ الوصفات التي كانت تذكرني بها! ومربى العنب هي إحدى هذه الوصفات.

نصيحة الوصفة:
1 - كما ذكرت أعلاه فإنه الموسم المثالي لتحضير مربى العنب (من الأيام الأخيرة من شهر نوفمبر إلى شهر ديسمبر)، نهاية موسم العنب حيث يكون العنب أكثر في اللحم وأقل في نسبة السائل أو الماء مما يُنتج مربى عنب رائعة.
2 - يجب إزالة أي رغوة تظهر على السطح أثناء طهي المربى،حيث يساعد ذلك على تخزينها لفترة أطول دون تلف.
3 - يجب أن يكون البرطمان المستخدم في تخزين المربى نظيف، معقم وجاف.
4- لا نقلب العنب مع السكر في البداية وفي أثناء الطهي يكون التقليب قليل جداً حتى لا يهترئ العنب.
5- يمكن إضافة مذاقات مختلفة للمربى حسب رغبتكم مثل القرفة، ينسون نجمة، قرنفل، فانيليا.. إلخ
6- يمكنكم أكل هذه المربى مع المخبوزات المفضلة أو استخدامها كحشوة للتارت، التشيز كيك أو الحلويات المفضلة.

الوصفة تكفــي: 2 برطمان متوسط من المربى
وقت التحضير: 20 دقيقة
وقت الطهــــي: 60 إلى 90 دقيقة

It's the end of the grape season, and that's the perfect time to make grape jam! My grandmother used to make it in this time of the year, she said it's the best season because the grapes have less liquid and more flesh, so you won't end up with grape peel jam! The grape I mean here is large with seeds and the color varies in this season from light green to rose.
I was very sad when she passed away 7 months ago... I thought I should make the best food that reminds me of her! And this is one of the recipes I really loved from my grandmother! (R.I.P)

Recipe tips:
1- As mentioned above it's the perfect season to make grape jam (from the last days of November to December), the end of the grape season when the grapes have more flesh and less liquid or water amount which then makes a perfect result grape jam.
2- Remove any foam that comes on surface while cooking jam, that will help storing it longer.
3- The jar used to store the jam should be clean, sterilized and dry.
4- Don't stir the jam at first to mix with sugar only toss, and stir once or twice during cooking.
5- You can add your favorite flavors to the jam like cinnamon sticks, star anise, cloves, vanilla...etc
6- This grape jam could be eaten with your favorite pastry or you use it as a filling for tarts, cheesecakes, or your preferred dessert.

Serves: 2 medium jars of grape jam

المقادير:
1 1/2 كجم عنب بالبذر (آخر الموسم نوفمبر أو ديسمبر)
1 كجم سكر أو نفس وزن العنب بعد تنظيفه ونزع البذور

الطريقة:
1- نزيل الأعواد من حبات العنب ونتخلص منها ثم نقوم بغسل العنب جيداً بالماء ونصفيه، ثم نقسم كل حبة نصفين وننزع البذور بطرف السكين.



2- نقوم بوزن العنب بعد تنظيف لنعرف الكمية المطلوبة من السكر وتكون نفس الوزن، ثم نضع العنب والسكر في إناء على حرارة هادئة ولا نقلب بل نهز الإناء لكي نخلط العنب بالسكر ولا نضيف الماء.



3- نترك الإناء على النار لتنضج المربى ونقلب قليلاً من وقت لآخر مع المتابعة المستمرة.
4- نعرف أن المربى نضجت إذا أخذنا جزء من السائل ووضعنا نقطة أو أطثر على طبق مُسطح ونميل الطبق، ستتكون كرة لا تميل مع الطبق بسهولة، هنا نعرف أنها جاهزة.

5- تُغرف المربى في برطمانات معقمة وجافة ومحكم الغلق ونضع على سطحها ورق بلاستيك شفاف لحفظها من الهواء مع التأكد من عدم وجود فقاعات بين الورق والمربى، وتحفظ في مكان مظلم وجاف وبعد الفتح تحفظ بالثلاجة، يمكن حفظها لمدة تصل إلى عام مع الأخذ في الاعتبار عدم استخدام ملعقة مبللة لغرف المربى حتى لا تفسد، فقط ملعقة نظيفة وجافة، وإذا تم استخدام ملعقة مبللة يجب أكل المربى في  وقت قصير لأنها لن تتحمل التخزين.

Ingredients:
1 1/2 kg grapes with seeds (in the season of November to December)
1 kg sugar or the same weight as grapes after cleaning and seeding

Directions:
1 - Take off the stems and rinse the grapes thoroughly with water and strain, then divide each one in half and take off the seeds with the tip of the knife  .
2 - Weigh the grapes after cleaning and seeding to know the required amount of sugar (should be the same weight) and then put the grapes and sugar in a pot over low heat without stirring, only toss to mix the grapes with sugar and do not add water.
3 - Let cook on low heat stirring slowly once or twice.
4 - We know it's ready when we take little liquid and place it onto a flat plate, it will form a ball and won't move easily with the dish when we rotate it a bit. (check the photos above)
5 - Pour the jam in clean, dry, tight seal jars and cover with plastic wrap touching the surface making sure there are no air bubbles, close the lid and store in a dark dry place for up to a year, and store in the fridge once opened, don't use a wet or unclean spoon to take jam out of the jar or it will spoil very soon, if used a wet spoon you should use the jam in a week or a few days more.
