Vegetable Stuffed Roast Beef


Hello everyone, today's recipe is a gourmet dish which I love so much, the idea of making it came to me when I made the roast beef once but my husband said that he would love to have something with more flavor inside more than garlic, black pepper and other spices, so I decided to cut the beef in a round cut to stuff it with vegetables, it was so yummy, tender, juicy, and healthy too. Hope you try it and tell me when you find it delicious :)

Recipe tips: 

1- It's important to use the beef tenderizer or anything like it to tender the meat so it's cooked perfectly and becomes tender after cooking in the oven.
2- The foil keeps the beef in shape but it's not healthy, that's why I used oven bag to put it between the meat and foil.
3- When boiling or steaming peas and carrots, add the peas first because it needs more cooking time.
4- The side dish is up to you, you can eat it with rice, salad or mashed potato.

Serves: 2 people.
Prep. time: 15 minutes.
Cooking time: 45 minutes approx.


Ingredients:
1lb beef tenderloin (not cut).
1 big onion halved and sliced.
5 small Carrots, 3 sliced lengthwise and 2 cubes.
2 small zucchini, sliced lengthwise.
Green beans (approximately handful).
150 gm peas.
Slat & pepper to taste.
30 gm butter

Tools: Oven bag or plastic and Foil

Directions:
1- First preheat the oven 250C, then cut the beef in a round this way.


2- Prepare a paper of foil with an oven bag on top of it, start tenderizing the beef and then lay it on the oven bag and let the inner side of the beef towards you.


3- Mix half of the sliced onion with salt and pepper to taste, rub the meat with salt and pepper, then sprinkle the onion on top of it.


4- Place the carrots, zucchini, and green beans on the beef on the inner side and start to roll carefully, then roll the foil from the sides well to keep in shape, make small holes in the top to allow the steam out, and place it onto a baking tray with a cup of water and place into the oven.




5- Prepare the peas and carrot cubes, steam them or boil them half the way, then in a pan on medium heat place butter and the other half of onion slices, peas and carrots and stir for 3 minutes.



6- Check the beef out from time to time if it needs water then add little more (hot water only), and after 40 minutes take the beef out of the oven and unwrap it.


7- Add the sauteed vegetables to the baking tray, and put it bake into the oven for other 10 minutes, or till the peas are well cooked.


8- let the beef rest for minutes and then slice it with a sharp knife and serve, Bon Apetit... :)
