Today's dish is healthy, simple, and quick, it also can be cooked for people who eat diet to get in shape, this recipe is a chicken salad that has Mexican style ingredients like sweet corn & corn tortilla chips. This recipe is being presented in many restaurants and you can make it at home which is healthier and cleaner, I love this recipe so much and I hope you do too. :)
Recipe tips:
1- Chicken must be cooked properley or else it would be harmful to eat, to make sure it's well cooked see if it has a white color inside, if it has a pink color then it needs more cooking.
2- When using mayonnaise make sure that vinegar is in it's ingredients to make sure it has no bad bacteria.
3- Don't use the same cutting board for raw chicken and vegetables, you have to wash very well or use a different cutting board for each.
Serves: 3 to 4 people as salad, or 2 people as main course
Prep. Time: 30 minutes
Cooking Time: 14 minutes.
Ingredients:
1 Boneless chicken Breast (halfed)
1 cup corn tortilla chips (Doritos)
1 cup sweet corn
1 cup sweet corn
1 iceberg lettuce
1 cup Kraft cheddar cheese, shredded
1 cup tomato cubes
3 tbsp Heinz BBQ sauce
1 tbsp Heinz hot sauce
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 chilli powder
salt and pepper
3 tbsp vegetable oil
For serving: BBQ sauce & mayonnaise
Directions:
1- Prepare the chicken breast by tenderizing so it has the same thickness, then sprinkle the onion and garlic powder, salt and pepper, and chilli powder, then add BBQ sauce and hot sauce and rub it till well coated, then leave it in the fridge for about 30 minutes.
2- When the Chicken breast is ready place a pan with the oil on medium heat and after it's heated place the chicken breast and put it on each side for a minute first to gain a good color then let it cook for about 7 minutes on each side.
3- While the chicken breast is beeing cooked prepare the salad dish by makin a plate of lettuce leaves, then add layers of chopped letuuce, tomato cubes, cheddar cheese, sweet corn, and crached corn tortilla chips. and place tortilla chips around the lettuce like this.
4- Once the chicken is ready, cut it and place on the vegetable plate, serve with BBQ sauce and mayonnaise, and... Bon Apetit :)
