Fried Shrimp & fish with special rice




This recipe is Egyptian, my mom used to cook it for us, and I love it so much, hope you love it too. The rice here is made specially for fried sea food (cooked with tomato paste, sometimes called "Sayyadiya"), you can eat it with anything you like but I prefer it with this dish, it is usually served with Egyptian tahini salad, and simple vegetables salad (tomato is the best in it with this dish) I LOVE it :) . Note: (my mom's secret) to make the rice tastes great you can add 1 tsp of the oil that you fried the fish in, or simply you can add 1/4 tsp of the garlic mixture after leaving the fish in it for sometime.



Ingredients:

The rice:
1 cup of Egyptian rice or short grain rice (long grain rice doesn't taste as good)
1 1/2 cup of water
2 tbsp tomato paste
2 tsp salt
1 tsp ground black pepper
1 medium onion - chopped
2 tbsp olive oil

Shrimp & fish

You can use any kind or quantity you like of sea food with the same spices
I used here fish and shrimp (about 6 fishes and 400 gm medium-big shrimp)


20 big cloves of garlic, minced
1/4 cup lemon juice
4 tsp salt
2 tsp pepper
1 tsp cumin
1/2 tsp dried coriander

1 cup All purposes flour


Directions:

- First thing prepare fish & shrimps, wash them well, mix all the fish ingredients together except the flour in a bowl, add the fish and shrimps and mix them well inside fishes too, and marinate them for 30 minutes to 2 hours (the longer, the better).


- To cook the rice first wash it well, put the oil in a pan, add the onion, saute the onion till yellow.


-Add the tomato paste, water, salt and pepper, mix well then add the rice and stir, cover on the high heat till boil then stir again, low the heat and leave it for about 15 minutes (you can check after 10 min. to see if it needs more water, if so just add 3 tbsp)
- To fry the fish just put it in the flour, shake to drop any remained flour in it, and then put it in 180 degrees oil for about 5 min. or till golden, serve with rice and salad, and.. Bon Appetit :)
